Trained under Alain Ducasse at Louis XV in Monaco and Joël Robuchon in Paris, Chef Moreau spent twelve years gathering inspiration across eleven countries before founding Aurum in 2018. Her cuisine is defined by restraint — the belief that every unnecessary element removed reveals something truer beneath.
The tasting menu evolves entirely with each season, built on relationships with a curated network of small farms, coastal fishermen, and specialist foragers within a 200-mile radius of the restaurant.
